2 - green apples, cored and finely chopped
1 - teaspoon cider vinegar
1/2 - cup bite-size strips red sweet pepper
2 - tablespoons light mayonnaise
2 - teaspoons pure maple syrup
2 - teaspoons canola oil
12 - ounces pork tenderloin, cut into bite-size strips
1/3 - cup barbecue sauce
8 - small savoy or green cabbage leaves
2 - green onions, sliced


For slaw, in a bowl toss together apples and cider vinegar. Stir in sweet pepper, mayonnaise, and maple syrup.
In a large nonstick skillet heat oil over medium-high heat. Add pork; cook and stir 4 to 6 minutes or until no longer pink. Drizzle with barbecue sauce; toss to coat.

Spoon pork mixture into cabbage leaves. Top with apple slaw. Sprinkle with green onions.
