This Valentine's Day, treat your loved one with a well balanced gourmet Seafood Dinner! For your entree, take pride in feasting on the best, most succulent sweet Lobsters plucked from the icy cold waters of the Northeast. These gourmet Lobster Tails are just that, a cold water variety from Maine prized for flavor and texture. In addition to this, Arancini are the traditional food for the Italian feast of Santa Lucia, hand-rolled balls of white rice with savory cheeses and the flavors of the day. Ours are a true classic, made to recall Chicken Cordon Bleu, with chunks of premium chicken breast, smoked ham, and four cheeses - Fontina, Swiss, Parmesan and Mozzarella. Pair it all up with some sides.. but not your ordinary sides! Our Roasted Root Vegetables and Stuffed Baked potatoes  make a perfect side dishes to any meal. This meal includes the following:

    4 (5 oz.) Lobster Tails
    1 (7.5 oz. pkg.) Classic Arancini
    2 (12 oz. pkgs.) Roasted Root Vegetables
    4 (5.5 oz.) Stuffed Baked Potatoes

Cold Water Lobster Tails
Broil: Thaw lobster tails in refrigerator. Preheat broiler, position top rack 3-4 inches from heat source or preheat grill to medium. Butterfly tails by cutting down through middle of hard shell with a sharp knife. Cut through flesh but not underside membrane. Hold tail in both hands and open flat. Brush lightly with melted butter or olive oil. For broiling, place lobster tails on broiler pan shell side down. Broil for 6-7 minutes. For grilling, place flesh side down on grill and cook for 7-9 minutes, flipping when necessary if flare up occurs. Stove Top: From frozen; bring 2 quarts of water to a boil in large saucepan. Remove plastic wrap from frozen tails and place in boiling water. Return to a boil, reduce heat to a simmer and cook tails for 12-15 minutes until meat is opaque in color.

Classic Arancini
Do Not Thaw! Oven: Preheat oven to 425F. Remove desired number of frozen Arancini's from tray and place on a foil lined baking sheet allowing 1 inch or more between pieces. If necessary use two baking sheets. Bake uncovered for 15-16 minutes.

Roasted Root Vegetables
Do Not Thaw. Oven: Preheat oven to 450F. Remove vegetables from packaging. Spread in single layer on a rimmed baking sheet. Toss with 1 tablespoon olive oil, teaspoon salt and ⅛ teaspoon ground black pepper. Roast for 25 minutes until golden brown and tender. Microwave (1100 Watt): Remove vegetables from packaging. Place in a microwave-safe dish. Toss with 1 tablespoon olive oil, teaspoon salt and ⅛ teaspoon ground black pepper. Cover with plastic wrap venting one corner. Microwave on HIGH 3 minutes. Carefully peel back film; stir. Microwave an additional 1 minutes or until tender.

Stuffed Baked Potatoes
Bake: Preheat oven to 350 F. Remove potato from package. Place desired number of frozen portions on an ungreased baking sheet. Bake 40 minutes, until heated through and lightly browned.
Grill: Preheat grill. Remove potato from cellophane package. Place frozen potatoes on a sheet of aluminum foil. Wrapping foil around potatoes, leaving top half exposed. Grill on medium-high heat. Cook with grill lid down for 35 to 45 minutes. Microwave: Remove potato from wrap. Place one frozen potato on microwave safe dish. Cook on high for 21/2 to 4 minutes rotating at half way point. To cook two potatoes, increase cooking time to 4 to 6 minutes.
